So, first of all, there are two different kinds of M.2 drives. There are ones that connect via SATA and ones that connect via NVMe (which is a special kind of PCIe like a graphics card uses but is 4 lanes (GPU is usually 16)). Both of these kinds of M.2 drives are still considered SSD’s, but I assume you mean SATA connected 2.5″ drives when you say SSD’s.
So, as you can probably guess from above, M.2 drives that connect with SATA are just the same as 2.5″ drives that connect with SATA and thus are generally about the same speed. So, SATA has a peak sequential transfer rate of a bit over 500MB/s. NVMe drives on the other hand can be as fast as 2500MB/s (about five times faster for peak sequential performance). That said, random performance is often more important than sequential. For example, sequential performance is important for copying files from one very fast drive to another, but random is more important for fast bootup, fast program launching, fast game level loading, etc. IOPS vary significantly from drive to drive, but if you compare the Samsung 850 pro (once of the fastest SATA 2.5″ drives) against the Samsung 960 evo (newer but a more good performance for good price model of NVMe drive) you see that the SATA 850 is around 100k IOPS where the NVMe 960 is around 360k–380k IOPS. This is a pretty high performing NVMe drive though (not so much as the 960 pro but still) so it will be important for you to compare the specific NVMe drive you are getting against an SATA alternative to see what the specs really are.
So, in summary, NVMe drives vary between the same speed as SATA 2.5″ SSD’s to as much as 5 times (or even a bit more) faster.
